When people ask where I am from, I usually respond “from all over”. I grew up in Puerto Rico and the Pacific Northwest. My father spent some time in Thailand while at University and my mother is Cuban, the result of all of this is a wonderful cross pollination of cultures and food that gets reflected in my cooking. I love exploring cultures through their food. I have a passion for making healthy and delicious food to consume.  My own personal health journey led me to wanting to know more and to share my knowledge with others. I recently became a Functional Nutrition Counselor. For 14 years, I cooked and managed restaurants at Aspen Skiing Company and catered for private cycling tours. My first trip with The Cycling House was in 2018 on the Glacier to Yellowstone tour. I’ve lived in Carbondale, CO with my husband and son for over 22 years and am an avid skier and cyclist. Fun Fact: I learned to cook & bake at 11,212 ft.

What is the best thing about working at The Cycling House?

I love that I get to play with the trifecta of my passions, food, bikes, and travel all while getting to know you.

Do you have a favorite ride?

My favorite ride is Sa Calobra on Majorca. The beautiful designed serpentine road with the awesome banked turns, spiral with bridge, beautiful scenery. It combines mountains and the ocean- it’s like umami in the culinary world. It is as if the bike and road become your very own roller coaster.

What is the most memorable day you've ever had on the bike?

One Thursday afternoon (which practically guaranteed rain), I rode to Maroon Bells with a good friend. Soon a light rain moved in, cooling The Valley and releasing the refreshing smell of anise and mint mixed with damp earth, which was wonderful until it suddenly started hailing. We had to stash our bikes in an aspen grove, and some very kind people asked us if we would like a ride back into town in their warm, dry car. Adventure, and camaraderie.
